Kale Raab and Mushroom Quiche!


I can’t explain how delicious this is!  I had it for lunch today, shared it with a friend for dinner, and will probably have it for breakfast tomorrow…
Mine is with Kale Raab and Mushrooms but you can use any two of your favorite veggies.  Try spinach, asparagus, broccoli, etc.

You’ll need
-       4 eggs
-       ¾ cup half & half
-       8 oz of goat cheese (substitute your favorite cheese if you want)
-       1/8 teaspoon nutmeg
-       ¼ teaspoon salt
-       9 in piecrust



What to do
-       Preheat your oven to 375
-       Sauté your veggies in a bit of oil (I like to use coconut oil) for 5 – 7 minutes
-       Fit piecrust to a 9 in quiche or pie dish or use a refrigerated piecrust that comes in a baking tin
-       In a bowl whisk the eggs, half & half, salt and nutmeg
-       Crumble or grate the cheese (depending on what kind your using) and mix it in to the egg mixture
-       Add your veggies to the mixture and there’s your filling!
-       Pour the filling into the piecrust and bake for 35 – 40 minutes (until the crust is lightly browned and a fork stuck in the middle of the quiche comes out clean)
- Wait 5 minutes before eating

Ever tried this?

A simple, fresh, 2 minute salad!
Use a vegetable peeler to cut a Zucchini into strips
Drizzle with Lemon juice
Sprinkle with Salt and a tiny bit of Pepper
Top with Parmesan

That's it...seriously
(try topping it with your favorite herb)
