Peach Bread


Summer is coming to an end and soon we'll have to say goodbye to peaches!  Personally, I am not ready...

This was a bit of an experiment, but it turned out delicious!  It's basically just banana bread with peaches and a lot of cinnamon.

What you'll need

  • Two large ripe peaches
  • 3 eggs
  • 2 cups sugar
  • 2 teaspoons vanilla extract
  • 1/2 cup vegetable oil
  • 3 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 3 teaspoons cinnamon (plus more to sprinkle on top)
What to do
  • Preheat the oven to 350
  • Grease your chosen baking pan (I used an 8x10)
  • Beat the eggs in a large bowl and then blend in the sugar, oil, and vanilla
  • Add the flour, baking powder, baking soda, salt and cinnamon; mix until combined
  • Stir in the peaches and pour the batter into the baking dish
  • Bake for 50 minutes, or until a toothpick stuck into the center comes out clean
