Summer is coming to an end and soon we'll have to say goodbye to peaches! Personally, I am not ready...
This was a bit of an experiment, but it turned out delicious! It's basically just banana bread with peaches and a lot of cinnamon.
What you'll need
- Two large ripe peaches
- 3 eggs
- 2 cups sugar
- 2 teaspoons vanilla extract
- 1/2 cup vegetable oil
- 3 cups flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon baking soda
- 3 teaspoons cinnamon (plus more to sprinkle on top)
What to do
- Preheat the oven to 350
- Grease your chosen baking pan (I used an 8x10)
- Beat the eggs in a large bowl and then blend in the sugar, oil, and vanilla
- Add the flour, baking powder, baking soda, salt and cinnamon; mix until combined
- Stir in the peaches and pour the batter into the baking dish
- Bake for 50 minutes, or until a toothpick stuck into the center comes out clean
